  • Cut into 12.5mm wide wedges without ends
  • Cut slit from centre, halfway towards outer skin
  • Flesh must not be soggy, brown or mushy

Flamed Orange Zest (6 points)

  • Bright orange colour, skin must be fresh and firm
  • cut a piece of zest (do not cut through the flesh) approx 3cm x 3cm
  • Warm both sides of zest over a lighter then squeeze the skin side through the flame over the drink
  • Drop into drink orange side up
  • Avoid holding garnish too long as it needs to go in drink
  • The twist does not have to rim the glass

  • Always use clean, sharp knife
  • Sanitise the knife and cutting board between fruits
  • Rinse fruit before cutting
  • Do not over cut fruit
  • Do not mi old and new batches
  • Always wear gloves to protect your hands from fruit acids
