Lemon Wedge (3 points)
1/8th cut, topped and tailed
Bright yellow skin, slight green cast is allowed, without scars
Fresh & moist, no deterioration or pulp, not dried out
Lime Wedge (3 points)
1/8th cut, remove stalk end

Orange Wedge (3 points)
1/8th cut
Bright orange skin, without scars
Fresh & moist, no deterioration or pulp, not dried out.
Cut to order - before making drink
Pineapple Wedge (4 points)
- Pineapple cut into 1/8th to to bottom with core removed
- Cut into 12.5mm wide wedges without ends
- Cut slit from centre, halfway towards outer skin
- Flesh must not be soggy, brown or mushy
Mint (2 points)
- Fresh green leaves, not browned or wilted
- each sprig should consist of 6-8 leaves, 3 inch stalk
Flamed Orange Zest (6 points)
- Bright orange colour, skin must be fresh and firm
- cut a piece of zest (do not cut through the flesh) approx 3cm x 3cm
- Warm both sides of zest over a lighter then squeeze the skin side through the flame over the drink
- Drop into drink orange side up
- Avoid holding garnish too long as it needs to go in drink
- The twist does not have to rim the glass
Lime Twist (5 Points)
- Bright green skin, slight yellow cast is allowed
- Cut a strip of zest (without too much pith) approx. 2.5cm wide x 6cm long from a whole lime
- Twist zest over drink to release the oils then drop into drink
- Avoid holding garnish for too long as it needs to go in drink
- The twist does not have to rim the glass

Cucumber Wheel (4 points)
- Cut into wheel approx. 10mm wide, cut slit half way from outer skin to middle
- Bright green skin, without scars. Flesh should be firm not soft or mushy
- can be prepped before the shift and kept in soda water to stay fresh, must be discarded at end of the night.
- Avoiding holding too long
Banana Wheel (4 points)
- Must be bright yellow not soft mushy or brown
- Cut 10mm thick wheel at 45 deg angle, remove outer skin
- Cut slit halfway from outer edge to middle
- Avoid holding too long
Whole Strawberry (4 points)
- Must be bright red with healthy green stalk
- No deterioration of outer skin or bruised in any way
- Place on rim of glass with stalk end up, halfway from bottom to top
- Avoid holding for too long
Fruit Cutting Procedures (6 points)
- Always use clean, sharp knife
- Sanitise the knife and cutting board between fruits
- Rinse fruit before cutting
- Do not over cut fruit
- Do not mi old and new batches
- Always wear gloves to protect your hands from fruit acids
