Food Testing Flashcards
1
Q
Name of sugar test (sbs)
A
Benedict’s solution
2
Q
Name of protein test (pbt)
A
Biuret test
3
Q
Name of lipids/fats test (lfet)
A
Emulsion test
4
Q
How to conduct emulsion test (step-by-step)
A
- Shake the substance with ethanol until it dissolves
- Then pour the solution in water
- If lipids/fats are present, they will precipitate from the solution and form a milky liquid
5
Q
How to conduct biuret test (step-by-step)
A
- Add potassium hydroxide to the solution to make it alkaline
- Then add copper sulfate solution
- If the solution turns blue, protein is not present
- If the solution turns purple, protein is present
6
Q
How to conduct Benedict’s solution test (step-by-step)
A
- Add Benedict’s solution to a sample
- Heat it in a water bath that’s set to 75 degrees celcius
- If sugar is present the sample will form a coloured precipitate
- The higher the concentration of sugar, the more the colour changes
7
Q
Benedict’s solution colour chart
A
Blue (no sugar) -> green -> yellow -> orange -> red (very high concentration of sugar)
