Food Standard – Small Lobster Tail
Example of description:
A cold water lobster tail lightly brushed with our paprika butter and Shula’s seasoning. It is baked to perfection and served with drawn butter and lemon.
Selling points:
o Goes great with any number of Chardonnays that will complement the lightly sweet lobster meat and rich butter.
o Add to any steak for a different take on a surf and turf.
Food Standard - Sautéed Spinach
Example of description:
Fresh spinach sautéed in olive oil with garlic, salt and pepper.
Selling points:
o This is a great appetizer for the table to share.
o Really fresh and healthy side dish that goes well with steaks, chicken or seafood.
Food Standard - Creamed Spinach
Example of description:
Made with spinach, garlic, shallots, cream sauce, parmesan cheese and salt. When served, it is topped with additional parmesan cheese .
Selling points:
o This is a great appetizer for the table to share.
o This side would go well with anything on the menu.

Food Standard - Sautéed Mushrooms
Example of description:
Portobello, Cremini, Shiitake and Button mushrooms seared until golden brown. Shallots, garlic, rosemary, thyme, salt and pepper are added and the pan is deglazed with white wine, the mushrooms are then placed in a rarebit and served immediately.
Selling points:
o This is a great side dish for the table to share.
o These mushrooms would go well with any steak or even the French cut chicken.
o You get a lot of earthy flavors from the mushrooms and the addition of the shallots, garlic and herbs makes these a very flavorful accompaniment.

Example of description:
Large asparagus (approx. 12-14 spears to an order) that are steamed and served with a side of hollandaise.
Selling points:
o This is a great side dish for the table to share.
o Traditional side dish for a steak house.
Food Standard – Key Lime Pie
Example of description:
With a graham cracker crust, this is a very creamy, sweet and slightly tart dessert. It is garnished with whipped cream and lime. The whipped cream takes a little of the tartness away, but it is the key lime flavor that makes this special.

- This is a great finish to any meal, it is light and creamy and is a combination of sweet and tart

Example of description:
A creamy cheesecake that is both light and full flavored. It is served with whipped cream, a dentelle cookie wafer, fresh strawberry and real raspberry sauce (coulis)

- This is a classic dessert.
- A surprisingly light cheesecake when compared to a true New York style cheesecake.
Food Standard – Crab Mac and Cheese
Example of description:
Gemelli pasta tossed in boursin cream sauce and placed in a rarebit. It is topped with jumbo lump crab, parmesan cheese and crushed croutons and then placed in the oven for approximately 7 minutes until the top is brown and the sauce is hot and bubbling. It is removed from the oven and garnished with green onions.

Example of description:A rich chocolate dessert that is baked until it has a slight crust on top. It is filled with 3 oz. of rich chocolate. When the dessert is cut into, the melted chocolate spills out giving the sensation of molten lava. It is served with Haagen Dazs vanilla ice cream and whipped cream..Selling points:* Very rich and decadent.* Great dessert for the table to share.

Example of description:Large Sweet scallops seared in Cajun spice and served with a pineapple-mango salsa. The salsa has golden pineapple, fresh mango, red pepper, red onion, and cilantro that is tossed with Agave nectar to give it a little natural sweetness.Selling points:* Fresh and light.* Great flavor combination of heat and sweet.* Two large scallops so it can be shared.
