How does temperature affect food spoilage
Bacteria grow and develop in warm temperatures, the ideal temperature growth is 30-37 degrees
How does moisture affect food spoilage
Where there is no moisture no bacteria can grow, however bacteria and moulds can produce spores which survive until water is added
What are the three ways food can be contaminated
Bacterial, chemical and physical
What is physical contamination
E.g a hair from a Chef in the kitchen, soil from the ground when harvested
What is chemical contamination
E.g cleaning products
What is bacterial contamination
Most bacteria are harmless but some can cause illness (pathogenic bacteria)
These can come from cross contamination
What is binary fission
The process that bacteria used to divide and multiply
What is food poisoning
illness resulting from eating food which contain food poisoning micro-organisms
What is a toxin
A poison produced from bacteria which can cause food poisoning
What is cross contamination
The transfer of bacteria from one source to another
How does time affect food contamination
In right conditions bacterium can divide into two every 10-20 minutes through a process called binary fission
