Food Related Causes Of Ill Health Flashcards
What are the 3 main causes of food related ill health
Microbes
Chemicals, metals and poisonous plants
Food allergies and intolerancess
What are microbes
Tiny plants and animals. (Microorganisms)
What are microbes called
Bacteria mould yeast
Where do microbes come from
Air, water, soil, dust, dirt, sewage and many more
What do microbes do to food
They live, grow and multiply. They make food unsafe to eat and often smell, taste and look bad
What makes microbes grow?
Right temperature, water, food , time to grow
Why do microbes make food unsafe to eat
Put waste products and poisons into the food and if people eat them they get food poisoning. They make people ill because they irritate the digestive system, some micrboes are needed to make food though. Bacteria used to make yogurt. Yeast used to make bread, some moulds used to make cheese
Ways food handlers can stop microbes making food unsafe
Prevent cross contamination
Cook food to high temp killing microbes
Cool food, freeze food
Dry food
Cover food
Preserve food
What is food poisoning
Common and nasty illness that can lead to serious health problems. Harmful bacteria are the main cause of food poisoning
5 symptoms of food poisoning
Headache, weakness, diarrohoea, high body temp and feeling cold and shivery
How do moulds make food unsafe to eat
Send out tiny spired which land on the surface of food, spores germinate and send roots into the food if conditions are right. You can see large number of moulds grow on food, make food taste and smell unpleasent and contain toxins which make people ill
How does yeast make food unsafe to eat
Settling on food and fermenting any sugars into co2 gas and alcolhol. They produces small brown spots on food
What does chemicals do in food
When food becomes contaminated with chemicals, it makes people ill very soon after the food enters the body.
How do food handlers avoid chemicals getting into food
Not to much food additive (food colouring), not too much cleaning product when cleaning a kitchen and store chemicals in a unlabeled container
What do metals do to food
Some metals are poisonous if they get into the body eg copper lead iron.
