What are the factors that affect food choice
Religious diets, vegetarians, medical conditions, allergies and intolerances
Judaism dietary requirements
No shellfish or pork, only kosher meat, no diary foods are eaten with meat in a meal

Usually diagnosed in over 40s and often associated with excess body weight, high blood pressure and cholesterol,

Initially with medication/tablets, good diet and exercise
What is coeliac disease
A condition where people have a reaction to gluten, a protein found in wheat, barley, rye and oats
What is added to gluten free flour to decrease the amount of gluten in it

What is lactose intolerance
Caused when the body is unable to digest lactose, causes stomach upset
What is an allergy to nuts called
Anaphylaxis, carry epi-pen
What is a paired preference test
Testers are given to taste two similar samples, asked which one they prefer
What is triangle testing
Three samples tested but tow are the same, aim is to find out if the tester can pick out which sample is different, helps to work out whether the healthier product can be discovered
Who controls the food labels on packaging
EU regulations
What things are mandatory in food labels
Name of food, weight or volume of food, ingredients list, allergen info, genetically modified ingredients, date mark and storage, cooking instructions, place of origin, name and address of manufacturer, lot or batch mark, E numbers, nutritional info
What are the recent changes to the food labels
Must include: energy value, amount in grams of fats, saturates, sugars, proteins, salts
Use by /best before dates
Indicates the date when the food is safe to eat before the quality begins to deteriorate and bacterial numbers rise
Other factors affecting food choice
Physical activity level(PAL), healthy eating, income and cost of food, availability of food, seasonality, enjoyment of food, lifestyle, celebrations/occasions

Celery, cereals containing gluten, crustaceans, eggs, fish, lupin cows milk, molluscs, mustard, nuts, peanuts, sesame seeds, soy beans, sulphur dioxide
What is a display by date
Indicates shelf-life in the retail store
