allergy:

  • produces a range of symptoms that can vary from mild itching to severe breathing difficulties or even shock
  • symptoms usually happen immediately after eating the food

intolerance:

  • immune system is usually not involved
  • symptoms takes much longer to develop & are generally not life threatening
  • can adversely affect long-term health
