A thick, aromatic, sweet & salty Cantonese sauce that is used for stir fry or dipping sauce. Contains soybeans, fennel, chili pepper, & garlic.

Why do we choose not to offer the Shaved Brussels Salad with the dressing on the side?
Because the large surface area of the shaved brussels sprouts makes for a very unpleasant dryness unless they are thoroughly incorporated with the dressing, which is impossible to do yourself at the table with a fork.
The salad is tastefully prepared and not overdressed. Overdressing is a common reason that people tend to order dressing on the side.
Why is Caesar Salad not vegetarian?
Caesar dressing contains Anchovies.

Ōra King Salmon, a premium breed of King Salmon from New Zealand. Among the most prized lines of Salmon in the world due to its richly marbled fattiness.
The Salmon is Sashimi-Grade.
Ōra is the NZ Maori word for “fresh” or “alive”.

Dashi - a savory Japanese stock or simmering liquid. Accentuates the flavor known as umami.
Made by brewing Konbu(Japanese seaweed) and flavored with Katsuobushi(dried Bonita flakes)
Describe Kushiyaki
Kushiyaki translates to “Grilled Skewers”
These skewers are cooked on a traditional Japanese charcoal grill.
Each Kushiyaki on the menu is flavored with its own unique seasoning. The Chicken and Steak are plated with a sauce.

Describe the preparation of the chicken.
The chicken is first brined before being hung in the dry cooler for a week.
Afterwards, the chicken is lightly smoked, adding flavor and color.
Finally, it is finished in the wood fire oven at a high temperature for a nice crispy skin.

It is a double smash-burger. Smash burgers develop a delicious rich flavor from the browning that occurs from the direct contact with the grill.

An Argentinian Herb-dressing made with parsley, mint, garlic, fresno chilis, vinegar, lime juice, and olive oil. (That’s the Dorothy’s-specific recipe.)
