Why do we choose not to offer the Shaved Brussels Salad with the dressing on the side?
Because the large surface area of the shaved brussels sprouts makes for a very unpleasant dryness unless they are thoroughly incorporated with the dressing, which is impossible to do yourself at the table with a fork.
The salad is tastefully prepared and not overdressed. Overdressing is a common reason that people tend to order dressing on the side.
Why is Caesar Salad not vegetarian?
Caesar dressing contains Anchovies.

The salmon are hatched in fresh spring water and placed in NZ’s Marlborough Sounds, where they are left to mature in fast-flowing sea water before they are finally harvested.
The highest quality salmon are selected from these waters and graded as Ōra King.
