What do you do first?
Sift flour and salt into a large mixing bowl and then rub in the butter, which should be in small chunks.
After you’ve mixed the flour and butter, what do you do?
Add 2/3 of water and mix until a firm dough. More water may be needed. Then put in fridge and leave for 20mins.
What do you do after putting the dough in the fridge?
Knead the dough gently on a floured surface and then roll out the dough in 1 direction until it’s 3 times the width (roughly 20cm x 50cm)
After rolling out the dough, what do you do?
Mark out the dough in 1/3s horizontally then fold the top one to the centre. Then fold the bottom of the top.
After do the first fold, what do you do?
Turn dough to the left 1/4 round and do the same steps.
What do you do to finish the pastry?
Cover with cling film and put in fridge for at least 20 minutes before use.

250g plain flour
250g butter
2tsp salt
250ml cold water
