A large snail species used for chowder, fritters of ceviche. From the south atlantic and north atlantic. goes by Channeled whelk in the north atlantic.

Pacific ocean snail, pounded to tenderize. supply is limited so price is high, USA has banned the harvest of abalone because it is over harvested and slow to repopulate.

Land snails, farm raised in california, labor intensive, available fresh, frozen or canned.

Oysters from warmer climates are fattier and more opaque, oysters from colder climates are more briny and translucent.

Scallops are hermaphrodites with both reproductive organs, orange roe means it is female, yellow roe means it is male, the edible part is the adductor muscle, in europe, the roe is sold to be eaten with the scallop.
