Fiber Flashcards

1
Q

What is the different between dietary fiber and functional fiber?

A

Dietary fiber: Nondigestible CHO and lignin that have not been disrupted very much by refinement or processing (known that is it fairly at its natural state)–> on food labels
Functional fiber: Nondigestible CHO that must have physiological benefits in humans

Q

Water-holding/hydration capacity and viscosity characteristics

A

1) Ability of fiber to bind water
2) Delayed (slowed) gastic emptying
3) Reduced mixing
4) Reduced enzyme function
5) Decreased nutrient diffusion rate
6) Altered small intestine transit time
7) Viscous soluble fibers delay, which means slow down or increase, transit time
8) Non-viscous insoluble fibers decreases, which means speed up or shorten transit time
