Fatty Acids and Esters Flashcards
What are fatty acids?
Fatty acids have a long hydrocarbon chain with a carboxylic acid group at the end (COOH). Double bonds= unsaturatedNo double bonds= saturated
What is a triglyceride?
A triester of glycerol and fatty acids. They contain the ester functional group -COO- three times.
Give examples of triglycerides.
The animal and vegetable oils we eat.
How do you make triglycerides?
By reacting glycerol (propane-1,2,3-triol) with fatty acids.
What is cholesterol?
Soft, waxy material in cell membranes transported in blood stream.Bad cholesterol- clogs blood vessels- increasing risk of heart attacks and strokes.Good cholesterol- removes bad cholesterol, taking it to the liver to be destroyed.
What does trans fats do?
Increase amount of bad cholesterol and reduce amount of good cholesterol.
What are trans fats?
Triglycerides made from trans fatty acids.
What reduces bad cholesterol?
Polyunsaturated oils
What is biodiesel?
Mainly a mixture of methyl and ethyl esters of fatty acids.
How is biodiesel made?
By reacting triglycerides with methanol or ethanol.
What name is given to triesters formed from glycerol and fatty acids?
Triglycerides
Is the triester formed from glycerol and fatty acids saturated or unsaturated?
Saturated- there are no double bonds (stearic acid and glycerol are both saturated).
