what are enzymes?
special proteins that act as biological catalysts.
what do enzymes do?
break down molecules into shorter ones (polymers and monomers)
what substrates do enzymes break down?
only substrates that fit their active site (‘lock and key’ principle)
whats the enzyme practical?
-mix amylase with starch and start timer.
-remove a few drops from mixture every 10 seconds and add to iodine.
-record the time. taken for no starch to be detected (will remain orange)
-repeat at different temperatures or with different pH buffer solutions added.
-optimum pH/temp is between 2 lowest times
what do carbohydrates break into?
into carbohydrates into simple sugar
what does amylase break starch down into?
glucose
what does proteases break proteins into?
amino acids
what do lipases break lipids into?
glycerol and fatty acids
