- convert glucose syrup into fructose syrup - fructose is sweeter than glucose, so it can be used in smaller amounts
what is isomerase used for ?
- slimming food (less is needed )
why is carbohydrase used in industry ?
-convert starch syrup, which is relatively cheap, into sugar syrup, which is more valuable
why is lipase used industry ?
- to break down - digest - the substances in stains into smaller, water soluble substances
what is lipase used for industry ?
- biological detergent (more eco-friendly )
what are the advantages of using enzymes in industry ?
- can be cheap once made
- can be reused
- reactions can happen at low temperature therefore less cost on energy
- helps the environment
what are disadvantages of using enzymes in industry ?
- easy to denature especially high temperatures
- cost a lot to produce the enzyme
- quite slow to make the enzyme

- can liquidise chocolate for soft centre otherwise it would be solid
what does industry do to make soft rented chocolate ?
-filling carbohydrase hardens -> allows chocolate on outside to not melt with filling
what do you have to do with baby food before it can be eaten in chunks ?
- food is liquidiesd –.>enzymes are added to it so babies can eat it –> otherwise the babies could not process it in there digestive system
equation for lactose ?
- lactose –> glucose + fructose
(lactose breaks down )
what does being lactose intolerant mean ?
- an inability to digest lactose which is a sugar found in milk
- or produce lactase to digest the lactose
not all milk as lactose milk in goats milk has no lactose in it
what are the side effects of having lactose when being lactose intolerant ?
- stomach cramps
- dihoreahaa
how is non lactose milk made ?
-lactose and sodium alginate mixed –> mixture got into calcium chloride –> little sodium chloride balls —> enzymes get stuck on the outside of the balls —> pour milk over immobilised enzymes = lactose free milk
what are the advantages of using immobilised enzymes ?
- can reach a new niece market sell products e.g lactose free milk
- you can reuse enzymes so its not that expensive to make again
- dont haver to spend money to purify the product
what are the disadvantages of using immobilised enzymes?
- expensive to first make it
- time consuming to make the product
