Alginate beads
A
The enzyme is mixed with a solution of sodium alganate which is added drop by drop to a solution of calcium chloride which reacts with the sodium alginate instantly forming jelly like beads containing the enzyme

Immobilised enzymes are used because
A
They’re more tolerant of temperature and pH changes than enzymes in solution
Molecules are held more firmly in shape by alginate and so don’t denature as easily
Parts of the molecules that are embedded in the beads are not fully exposed to temperature or pH changes
