Brined in Apple cider for 24 hrs & cooked over the wood grill

Raisins & onions cooked down in apple cider & winter spices
Chef recommends the pork to be prepared medium

5.5-6 oz black cod filet marinated in a Thai peanut marinate then boiled at high heat so it lightly Caramelizes on top Presented in broth Onions Cauliflower Broccolini & mushrooms Lime zest
THAI PEANUT MARINADE: soy sauce, crushed peanuts, sambul & honey
BROTH: cardamom spice, soy sauce, dried mushrooms, ginger, cilantro, garlic, & mint
BLACK COD: wild caught, cold water fish that oily & high in omega

12-14oz bone in short rib slow braised for 12 hrs & liqueur end up w/a bourbon caramel sauce
Garnished w/roasted mushrooms and mizuna greens & French bleu chz
Mizuna lightly tossed in smoked onion vin
Korean Style Skirt Steak
8oz Niman Ranch skirt steak
Marinated 12-36hrs then grilled & served over veggie fried rice topped w/tempura green beans

*skirt steak is a tougher! more textured cut that chef recommends prepared MED & will caramelize on the grill
