Brown butter bun, lobster, mv black sea salt, old bay potato chips, chives
5 oz fresh lobster meat in butter or mayo(esplette, celery red onion)
Lobster bathes in butter/mayo and is served on browned bun with chives and black sea salt, comes with old bay chips
Hot comes with beurre monte.

Squid Ink Tortellini
Sweet potato filling, onion brodo, countneck clams, taleggio, crispy speck.
Pasta filling made with roasted sweet potato, ginger, brown butter, clams, sage and taleggio cheese. Pasta made in house squid ink in dough.
Sauce is an onion brodo (onion, water, white wine)
Dish is topped with crispy speck (smoky ham)

Lobster Bake
lobster bake, chorizo, shrimp, clams, mussels, potatoes, corn
Saffron scented broth, mirepoix, fennel, garlic and seared tomatoes. Pan deglazed with wine and covered. Herbs and spices simmer for hours.
Stock is pureed, strained and reduced.
Clams and musssels steamed open with wine.
Lobster, corn, potatoes plated while hot, accompanied by toasted crostini

1.25 pound whole lobster, corn, coleslaw, drawn butter? Mashed potatoes?
Lobster steamed for 3 minutes, cut and cooked with clarified butter. Served with corn? slaw? mash?
Baked Stuffed
1.25 whole lobster, scallops, cod, lump crab, shrimp, lemon garlic butter
Lobster is steamed and stuffing (ritz crackers, lump crab, shrimp, scallops, cod)

Dover Sole
Dover sole, almonds, brown butter, broccolini, parsnip puree, fingerlings, grilled lemon
Pan roasted sole drenched in flour, Butchered ahead of time, bones removed and plated as a presentation.
Brown butter sauce, parsnip puree, potatoes, blanched broccolini, lemon.
