What is an emulsifier?
Are molecules with one part that’s attracted to water and another part to oil (or fat).
What does an emulsifier do?
stops the emulsion from separating
Do oils dissolve in water?

What are emulsions?
lots of droplets of one liquid suspended into another liquid
Is the emulsion thicker than the two substances individually?
Yes
Example of an emulsion?
Mayonnaise - sunflower oil and vinegar
Milk is what type of an emulsion?
oil in water
Attracted to water?
hydrophillic
attracted to oil?
hydrophobic
What happens when you shake oil and water with an emulsifier?
oil forms droplets, surrounded by a coating of emulsifier. Other oil droplets are repelled by hydrophillic bit of emulsifier, while water molecules latch on. EMULSION WON’T SEPARATE.
