Egg’s Physical Structure
Refers to the term that can be seen or touched in the naked eye
Egg
It is one of the most versatile ingredient and it is a product of poultry or fowl
Refers to the rough and bumpy texture that has 7,000-10,000 tiny pores in which it is to protect the contents against bacterial penetration.
Eggshell
Refers to the part of egg’s physical structure that protects albumen and egg yolk.
Membrane
Refers to the part of membrane that protects the albumen
Shell Membrane
Refers to the part of the membrane that protects the egg yolk
Vitelline Membrane
It is also known as the egg white
Albumen
The second largest part of the structure in which it holds 33% of the liquid weight of an egg
Egg Yolk
It is also known as the blastodisc which is a small white spot that channels–leads to the center of the yolk
Germinal Disk
It is a ropey strand in which it bachors the egg yolk to stay at the center of the albumen
Chalazae
The empty or shallow part of the egg that is located on the larger end of the egg
