Airen (lower in acidity and higher in alcohol than grapes from cognac) from La Mancha

What is the maturation for brandy de jerez?
Solera must be aged in Jerez in barrels of 1000L or less what were previously used to age Sherry
Describe a solera system
made up of a group of barrels. Each group is called a criadera except the one holding the oldest barrels which is called a solera

pot still to low strength. Bottled after being rested for 3 months in inert vessels. NO wood aging NOTHING added

Pisco Puro - made from a single grape variety that will appear on the label
Piswco Mosto Verde - made from a wine where fermentation is artificially stopped before all the sugars have converted to alcohol

Usually distilled to a higher amount than peru with 73% being the restricted maximum
Describe the resting period for Chilean Pisco
rested for at least 60 days. Can be rested in wood. Rauli, a local wood is commonly used instead of oak. Diluted before bottling
What are the 4 categories of Chilean Pisco?
Corriente/Tradicionel- at least 30%
Especial- at least 35%
Reservado - at least 40%
Gran Pisco - at least 43%
What is pommace in italian?
Vinaccia
What extra step is needed when dealing with white pommace?
Distiller must dilute the pommace with water and undertake a fermentation in order to have alcohol to distill
What distillation methods are used for grappa?
Both batch and continuous. The high level of solids is problematic
How many varieties can appear on a grappa label?
No more than two
What two labeling terms refer to age in grappa?
Vecchia or invecchiata aged for min 12 months
RIserva or stravecchia aged for min 18 months
What is allowed in finishing grappa?
Permitted to add aromatic plant material and 20g/L sugar. Caramel can be added if the Grappa has been aged for longer than 12 months. can also be matured in oak ash or chestnut
