Side Stripper bottoms are a component of cook water. Yeast cannot develop fully in the presence of ethanol.

Transfers Side Stripper bottoms to Cook Water Economizers and back to the Side Stripper
During upset conditions, transfers Side Stripper bottoms to the Beer Well
