Reservoir: man only, middle age females.
Incubation: 1-3 weeks
Mode of Transmission: Dairy Products, direct/indirect contact w/ patient or carrier (feces or urine), contaminated water, shellfish
Symptoms: continued fever, lymph nodes, diarrhea, ulcers in intestines, hemorrhage, used to check phenoll coefficient
Type: Bacteria
Toxin Type: Infection
Salmonella Typhi; Typhoid Fever
Reservoir: poultry, eggs, flies, turtles, hogs, fecal/oral route, rat, dog, feces
Incubation: 12-24 hours
Mode of Transmission: Ingestion of contaminated food, cross-contamination in food prep. Food directly contaminated 6 hr onset. Water outbreak rare.
Symptoms: Bloody or watery diarrhea, FEVER, acute infection, vomit, nausea, dehydration
Type: Bacteria, non spore
Toxin Type: Infection
Control: Dies at 130 degrees
Salmonella; Salmonella Typhimurium
Listeria Monocytogenes
Onset time: 9-48 hours for GI symptoms, 2-6 weeks for invasive disease
Symptoms: Fever, muscle aches, and nausea or diarrhea. Pregnant women may have mild flu-like illness, and infection can lead to premature delivery or stillbirth. The elderly or immunocompromised patients may develop bacteremia or meningitis.
Duration: Variable
Salmonella spp
Onset time: 6-48 hours
Symptoms: Diarrhea, fever, abdominal cramps, vomiting
Duration: 4-7 days
Shigella Spp
Onset time: 24-48 hours
Symptoms: abdominal cramps, fever and diarrhea, stools may contain blood and mucus
Duration: 4-7 days
