Anatra (duck preparation)

A

Duck is dry aged 10-14 days
duck breast is roasted a la plancha skin side down with salt and pepper, duck breast gets roasted in oven and rested in a butter bath for 10 minutes. Warmed on pick-up and sliced in two.
