What is the difference between Malolactic fermentation and Alcohol fermentation
A
Alcohol: the primary fermentation where the sugars of the grapes are converted into ethanol using yeasts ( Saccharomyces cerevisiae)
Malolactic: secondary fermentation where lactic acid bacteria are used to metabolize malic acid into lactic acid ( making the juice softer)

Difference in SO2 addition in white vs red wine
A
More SO2 in white wine is added because white wine is light in colour where as red wine is darker in colour so you would not see the browing as much.
