Strawberry Sponge Cake
Sponge cake. Strawberries are macerated in fermented strawberry honey. Sponge cake is glazed with fermented strawberry honey. Strawberry, lemon and tarragon purée, same liquid is made into a fluid gel. Chantilly topping the cake and finished with chervil as a garnish.
Blueberry
Phyllo dough tart shell is filled with blueberry compote (sugar, water, vanilla, lemon zest and juice) and whipped lemon verbena mascarpone (whole milk, lemon verbena, sugar, heavy cream, mascarpone). Topped with pistachio crumble (pistachio, flour, brown and granulated sugar, butter) and candied ginger.
Foster
Vanilla ice cream is served with foster sauce (rum, bananas, cinnamon, brown sugar, cream, butter)
Bread Pudding
Chocolate Bread pudding is made with Brioche, cocoa powder, eggs, cream, milk, salt, cinnamon, dark chocolate and garnished with whipped cream and chocolate sauce (cocoa powder, water, sugar)
