Definition of Descriptive Test

A

It is used to obtain detailed descriptors of the appearance, aroma, flavor and texture of foods and beverages and the scaling of the intensity of these attributes.

All descriptive analysis methods involve the detection and the description of both the qualitative and the quantitative sensory aspects of a product by trained panels of 5 – 100 judges or subjects.

Historical Background

A

informal descriptive methods existed long before and were commonly used by early chemists, expert perfumers and flavor, experts in the wine, tea, coffee, spirits, traditional industries and consumers.
The first formal, systematic descriptive procedure to be developed was the Flavor Profile Method in 1949.
