fat
a solid triglyceride (lipid).
Formed when fatty acids with many double bonds in the hydrocarbon chain (saturated) join to glycerol (animals)
oil
a liquid triglyceride (lipid).
Formed when three fatty acids with many double bonds in the hydrocarbon chain (unsaturated) join to glycerol (plants)
immiscible
two or more liquids incapable of being mixed to form a homogenous substance. e.g. oil and water
Triglyceride
Glycerol and three fatty acids covalently bonded together
Ester bond
Name the bond formed between a molecule of glycerol and a molecule of fatty acid
Unsaturated
Not all carbon atoms in the hydrocarbon chain of a fatty acid are linked the maximum number of hydrogens. There are one or more double bonds between the carbons
Saturated
All carbon atoms in the hydrocarbon chain of a fatty acid are linked to the maximum number of hydrogens. There are no double bonds between the carbons

Composed of glycerol, two fatty acids and a phosphate group
Hydrophilic
‘water loving’ A substance which dissolves in or bonds with water (polar substance)

‘water hating’ A substance which does not dissolve in or bond with water (non-polar substance)
