Butterfat - 4% associated with fibre in diet (via acetate)
Milk protein - 3.2% associated with energy in diet
Both are species dependent as well

Swedish red/ Norwegian red lower yield than Holstein but healthier
Simmental/fleckvieh - dual purpose (can be used for milk and beef)
