15 hour pork-
Braised black beans, slow roasted tomato an chipotle sauce, cilantro, chayote, sherry/lime vinaigrette (toasted cumin and coriander, sheet vinegar, fresh lime juice)
Wednesday
Fried chicken-
Half chicken brined for 48 hours. Goes directly into a buttermilk/jalapeño/garlic marinade for 24 hours. Served over waffles w a buttermilk and honey syrup
Thursday
Prime rib-
Queen cut prime rib seared and served w natural jus and crispy Parmesan mashed potatoes.
Friday
Lobster roll-
Maine lobster served w New England style hips on a brioche bun. Chips are old bay seasoned
Saturday
Paella-
Lobster tail and local shellfish served over saffron rice finished w chorizo and piperade. Lobster, clams, mussels, fresh squid, shrimp, saffron rice
Sunday
Spag and meatballs-
3 massive meatballs w Parmesan cheese, brioche bread crumbs, basil, oregano, parsely and tomato sauce w garlic, onion basil and chives
