Darwin, Stevenson includes his views to show the evolution of man and highlight that Hyde is less evolved making him this shorter and uglier man.
What was very set in the era?
Class, Stevenson highlights how unnatural and odd it was for Hyde to even be in the Higher class area of London. Thats how he was easily recognised due to his appearance too.
How does Stevenson use physiognomy? (belief of the way you look showing who you were as a person)
He used it when he writes about how Hyde looks and imbues him with an evil characteristic which his appearance seems to reflect. However he is the same person as someone who is morally good and higher class so Stevenson is trying to show this appearance vs behaviour is misleading as Jekyll had created such evil actions in this different body.
