Shake and strain over ice into rocks

Shake and strain over ice into rocks, or up into coupe

* 10-15ml Sugar Syrup
* 2 dashes Peychaud’s Bitters
Method:
Rinse rocks glass with absinthe, add ice and set aside
Stir Cognac, Sugar and Bitters over ice
Discard ice and absinthe, strain drink into the glass

* 1 Sugar Cube (or 5ml Sugar Syrup)
* 3 dashes Aromatic Bitters
* Sparkling wine
Method:
Drop bitters-coated sugar cube in flute
Pour cognac over sugar, top with sparkling

* 45ml Cognac
* 22.5ml Amaretto
Method:
Stir and strain into rocks with ice
