We challenged ourselves to come up with an alternative for the Veracruz. A daunting task but with enough volition, we were able to create something that fits our identity and is still the one hit wonder that was the Veracruz. We were really impressed with the Aqua Perfecta and thought it would go really well with tequila and Chareau. Although we all love the Veracruz and so do our guests we felt that it needed new breath and we could add depth. The combination of Thai Basil and Genovese Basil drives familiar intrigue that perhaps died several seasons ago. In every way this is a hit list of ingredients people will order always if they see it on a menu. Like if spa water and a margarita had a baby.

Wythe Negroni

A

1 Dash Orange blossom Water

A summer-y rendition of a cocktail that sells itself. It’s lightened with the acidity that is found in the Little City Dry Vermouth and rounded out by the barrel-aging in the Altos Reposado. Initially created to present as the hotel’s name sake cocktail, it seemed more appropriate to keep the integrity of a “Negroni” seeing as they sell themselves. And play off the often confusing pronunciation of Wythe.

Uptown

2 oz Starward Two Fold]= 3 oz Batch

The Uptown is a Combination of a Bobby Burns and a Manhattan, the result is a refreshing but Layered Summer Manhattan. The base is Starward Two Fold, a wonderful Whisky coming form Australia where the environmental factors allow them to achieve incredible things through barrel aging in a relatively short amount of time. Alma Finca comes to us from the people of Casa Lumbre, they produce this modifying spirit from fresh sweet and bitter oranges, Persian Limes, citrus blossoms and spices all from the Yucatan Peninsula. It’s zesty and bright with incredible texture. The Lo-Fi Gentian Amaro is made from white wine and Grape Spirits with cinchona ark, root extracts and tropical flowers. Its acidity lifts the drink and its bitterness adds another Layer.

This Cocktail came from the pursuit of a flovor profile. I happened upom the ABC aperitif from Christina Drouin, an incredible producer of Calvados. Unlike most apple liqueurs it tastes bright and acidic like a crunchy green apple. rather than the stewed baking spice profile we are used to from similar spirits. We have paired that with St. Germain to add sweetness and floral notes, Neversink Gin and Calvados provide structure botanics and body. We topped that with a t0uch of Sherry which ads bright acidity and nuttyness.

A twist on a Paper Plane. A favorite and inspiration of many other cocktails. Its base spirit is whiskey, however it’s delicious to almost all regardless of what spirit drinker you are. I wanted to make this a bit more tailored for warm weather and less polarizing by using something other than whiskey. Using Meletti for its notes of chocolate and Faccia Brutto Aamaro Gorini for its medicinal yet warm breeze-y vibes. The Nonino Aperitivo adds another layer of fresh fruit and herbs. We say “what one Rum can do, three can do better” is applied to amaros (and an Apertivo) here. In place of Bourbon, we have Lost Explorer Mezcal Espadin. An incredible mezcal from Oaxaca made from only fully matured 8 year old agave’s double distilled without the use of machinery. This is perhaps the most beautiful espadin I have ever tasted. It really feels like it was made for this cocktail. The smoke is gentle here, more of a supporting character, making this a drink that doesn’t overpower food. It tastes like a smoked tangerine.

It’s a spicy Cosmo people! You’re Welcome. When I tasted the St George Green Chili Vodka I knew I wanted to make a spicy Cosmo. One of if not the most iconic vodka cocktails outside the Moscow Mule, the goal was to bring this perfect drink to the next level. The Citadelle Jardin adds fresh layers of Melon and citrus, while the vodka keeps things green and zesty. This is a cheeky crowd pleaser.

Vice Presidente is our version of the Classic Known as El Presidente cocktail. Likely invented in the 1920’s in Havana by Legendary Bartender Eddie Woelke, this drink has been making a comeback in New York as of late. This version using Planterray 3 Star rum a blend of rums from Trinidad, Jamaica and Trinidad, this is a lighter version then the gold rum traditionally used in El presidentes. In place of Orange Curacao we are using a Valencia orange Triplesec from Indiana. This gives it a more coastal brighter vibe. Lastly we use our own housemade grenadine and Local Little city Dry vermouth. A sipper that’s just boozy enough while still being light and crisp.

Our namesake spritz is now non-alcoholic. While not an exact replica we wanted to be able to satisfy non alcoholic drinkers with a light, easy and still adult drink.

2.5 oz Fever tree premium Tonic water

Garnish: Orange Twist

A light refreshing NA Collins. Starring the Roots Divino Aperitif Bianco: Sweetened Wine is macerated with Gentian root, Wormwood, Rosemary and other greek herbs to create a classic Mediterranean Vermouth. It then undergoes reverse osmosis, gently dealcoholizing it before bottling. Fresh grapefruit juice, tonic water, and citric acid round it out.
