Mojito
50 ml white rum
25 ml lime juice
2 teaspoons sugar
6-8 fresh mint leaves
Soda water
Muddle 2 teaspoons of sugar and 6-8 mint leaves with 25 ml lime juice in a glass
Fill the glass with ice
Add 50 ml white rum
Top up with soda water
Stir gently
Garnish with a mint sprig and lime wedge
Daiquiri
50 ml white rum
25 ml lime juice
10 ml sugar syrup
Fill a shaker with ice.
Add 50 ml white rum, 25 ml lime juice, and 10 ml sugar syrup.
Shake well.
Strain into a chilled glass.
Garnish with a lime wedge.
Pina Colada
50 ml white rum
50 ml coconut cream
100 ml pineapple juice
Add 50 ml white rum, 50 ml coconut cream, and 100 ml pineapple juice to a blender with ice
Blend until smooth
Pour into a glass
Garnish with a pineapple slice and cherry
Tequila Sunrise
50 ml tequila
100 ml orange juice
10 ml grenadine
Fill a glass with ice
Add 50 ml tequila and 100 ml orange juice
Slowly pour 10 ml grenadine over the back of a spoon to create a layered effect
Garnish with an orange slice and cherry
Espresso Martini
50 ml vodka
25 ml coffee liqueur
25 ml espresso
10 ml sugar syrup
Fill a cocktail shaker with ice
Add 50 ml vodka, 25 ml coffee liqueur, 25 ml espresso, and 10 ml sugar syrup
Shake well until chilled
Strain into a chilled martini glass
Garnish with coffee beans
Negroni
25 ml gin
25 ml sweet vermouth
25 ml Campari
Fill a mixing glass with ice.
Add 25 ml gin, 25 ml sweet vermouth, and 25 ml Campari.
Stir well until chilled.
Strain into a chilled glass over ice.
Garnish with an orange peel twist.
Gin fizz

15 ml blackberry liqueur
Fill a glass with crushed ice.

*Strain - martini glass with half the rim damped with water, then dipped in salt.

Gin Martini
60 ml gin
15 ml dry vermouth
Fill a mixing glass with ice.
Add 60 ml gin and 15 ml dry vermouth.
Stir well until chilled.

Vodka Martini
60 ml vodka
15 ml dry vermouth
Fill a mixing glass with ice.
Add 60 ml vodka and 15 ml dry vermouth.

Dirty Martini
50 ml gin or vodka
15 ml dry vermouth
5 ml olive brine
Fill a mixing glass with ice.
Add 50 ml gin or vodka, 15 ml dry vermouth, and 5 ml olive brine.

Strain into a chilled martini glass.

Gimlet
60 ml gin or vodka

Splash of soda water
Fill a glass with ice.
Add 60 ml Aperol.
Top up with 90 ml Prosecco.
Add a splash of soda water.
Stir gently.

Bloody Mary
50 ml vodka
15 ml lemon juice
120 ml tomato juice
Dash of Worcestershire sauce
Dash of hot sauce
Pinch of salt
Pinch of black pepper
Rim the glass with celery salt.
Fill the glass with ice.
Add 120 ml tomato juice, 50 ml vodka, 15 ml lemon juice, a dash of Worcestershire sauce, a dash of hot sauce, a pinch of salt, and a pinch of black pepper.
Stir well.
Garnish with a celery stick, lemon wedge, and/or olives.
Mimosa
75 ml champagne or sparkling wine
75 ml orange juice
Fill a champagne flute halfway with chilled champagne or sparkling wine.
Top up with chilled orange juice.
Stir gently.
Garnish with an orange slice.
Old Fashioned
60 ml bourbon or rye whiskey
1 sugar cube
2 dashes Angostura bitters
Orange peel
Place the sugar cube in a glass.
Add 2 dashes of Angostura bitters.
Muddle the sugar and bitters with an orange rind.
Add a large ice cube to the glass.
Pour 60 ml of bourbon or rye whiskey over the ice.
Stir gently to combine.
Rusty Nail
50 ml Scotch whisky
25 ml Drambuie
Fill a glass with ice.
Add 50 ml Scotch whisky.
Pour in 25 ml Drambuie.
Stir gently.
Highball
50 ml whisky
150 ml soda water or ginger ale
Fill a highball glass with ice.
Add 50 ml whisky.
Top up with 150 ml soda water or ginger ale.
Stir gently.
Garnish with a lemon or lime wedge.
Pimms Cup
50 ml Pimm’s No. 1
Lemonade
Fill a glass or pitcher with ice.
Add 50 ml Pimm’s No. 1.
Top up with lemonade.
Add fresh mint leaves, sliced cucumber, sliced strawberries, and orange slices for garnish and flavor.
Stir well to combine.
Tom Collins
50 ml gin

In a glass or julep cup, muddle a few fresh mint leaves with 1 teaspoon of sugar and a splash of water to release the mint oils.
Fill the glass with crushed ice.
Pour 60 ml of bourbon over the ice.
Stir gently to combine.
Garnish with a sprig of fresh mint.
Mai Tai
50 ml white rum
25 ml dark rum
15 ml orange liqueur
25 ml lime juice
10 ml orgeat syrup
Fill a shaker with ice.
Add white rum, dark rum, orange liqueur, lime juice, and orgeat syrup.
Shake well.
Strain into a glass filled with ice.
Garnish with a pineapple slice and a cherry.
Long Island Iced Tea
15 ml vodka
15 ml rum
15 ml gin
15 ml tequila
15 ml triple sec
25 ml lemon juice
25 ml simple syrup
Cola
Fill a cocktail shaker with ice.
Add all.
Shake well to combine.
Strain the mixture into a glass filled with ice.
Top up with cola.
Garnish with a lemon wedge.
Irish Coffee
50 ml Irish whiskey
100 ml hot brewed coffee
1 to 2 teaspoons brown sugar
Whipped cream
Preheat a heatproof glass by rinsing it with hot water.
Add the Irish whiskey and brown sugar to the glass.
Pour in the hot brewed coffee and stir until the sugar is dissolved.
Top with a generous dollop of whipped cream.
Garnish with a sprinkle of ground nutmeg or cocoa powder if desired.
French Martini
45 ml vodka
15 ml Chambord (raspberry liqueur)
45 ml pineapple juice
Fill a shaker with ice.
Add vodka, Chambord, and pineapple juice.
Shake well.
Strain into a chilled martini glass.
