Passoa - 25ml
Pineapple Juice - 75ml
Prosseco - 25ml
Glass: coupe, no ice
Method: All ingredients (except prosecco) in a boston with ice, shake, strain into glass
Garnish: cocktail topper, served with prosecco shot
Classic Mojito
Bacardi - 50ml Gomme - 25ml Lime Wedges - 6 Mint Leaves - 6-8 Soda - top
Glass: hi ball
Method: Squeeze and drop limes, pour in gomme and muddle. Add mint and Bacardi then fill 2/3 of glass with crushed ice. Stir with bar spoon. Top with ice so it forms a dome and add soda.
Garnish: mint sprig and lime wedge
Spiced Mojito
Morgan's Spiced Rum - 50ml Gomme - 25ml Lime Wedges - 6 Mint Leaves - 6-8 Apple Juice - top
Glass: hi ball
Method: Squeeze and drop limes, pour in gomme and muddle. Add mint and Rum then fill 2/3 of glass with crushed ice. Stir with bar spoon. Top with ice so it forms a dome and add apple juice.
Garnish: mint sprig and lime wedge

Eristoff Vodka - 12.5ml Tanqueray Gin - 12.5ml Bacardi - 12.5ml Jose Cuervo - 12.5ml Blue Curacao - 12.5ml Lemon Juice - 25ml Gomme - 12.5ml Pineapple Juice - 75ml
Glass: sling with cubed ice
Method: All ingredients (except pineapple juice) into a boston with ice and shake. Pour pineapple juice into sling and slowly top with spirits mix until there’s a yellow then blue layer. Topped with crushed ice dome
Garnish: Lime wedge

Kahlua - 25ml
Espresso Cold Brew - 50ml
Vanilla Gomme - 25ml
Glass: coupe
Method: Shake all ingredients in a boston with ice and shake. Fine strain into glass

Salted Caramel Amaretto Sours
Amaretto - 50ml
Lemon Juice - 25ml
Salted Caramel Gomme - 25ml
Glass: Lo Ball with crushed ice
Method: Shake all ingredients in a boston with ice. Pour into glass

Blue Curacao - 12.5ml
Gomme - 25ml
Lime Juice - 25ml

Down the Clown
Old J Tiki Fire - 12.5ml JD Fire - 12.5ml Morgan's Spiced - 25ml Morgan's Dark - 12.5ml Vanilla Syrup - 12.5ml Pineapple Juice - 50ml Orange Juice - 50ml Bitters - 3 Dashes
Glass: Two Faced Tiki filled with cubed ice
Method: Shake all ingredients in a boston with ice. Strain into glass
Garnish: Tiki fire spray
