Dram Shop Act
Bartenders can be held liable for the actions of intoxicated people they served.
Bartenders and bar owners must demonstrate awareness of and concern for a patron’s condition
Spirits
Primarially gin, vodka, rum, whisky, tequila, and brandy.
Any liquor produced through distillation that does not contain sugar and has more than 20% APV.
ABV
Alcohol By Volume. How much of the drink is alcohol and how much is water. The proof is equal to double the percentage of alcohol.
Liqueur
Liqueur has sugar added and/or is less than 40 proof. Liqueurs act to add a little extra flavor or aroma to a drink.
Vodka
Largest selling category in the US.
Clear and colorless spirit that is distilled at a high proof and is rather tasteless. Used to be made from potatoes but is now often made from grain
Gin
Clear and colorless spirit that is flavored with juniper berry along with sundry roots, bark, seeds, and leaves. Originally developed to ward off diseases in 17th Century Holland.
Rum
Distilled from the extracged juice of the sugar cane plant, or in some cases from molasses.
Light rums (light brown colored) are traditional produced in southern Caribbean islands such as Puerto Rico and Trinidad. <6 months of aging in oak casks.
Dark rum is the result of a longer aging process, anywhere from 3 to 12 years, Dark brown colored, more aromatic, richer flavor than light or gold rum. Produced in the tropic islands like Jamaica, Haiti, and Martinique and St. Croix
Irish Whiskey
With Irish whiskey, the barley is dried in smokeless kilns. The barley and various grains are mixed with water and cooked in huge tanks. Placed in oak casks for four to ffteen years. Caramel or amber color. Generally, the darker the whiskey, the older it is.
Scotch Whisky
Scotch is made in Scotland. The barley is dried over peat fires, giving Scotch its smokey taste. After fermenting the scotch is distilled, aged in oak casks, and bottled.
Blended Scotch is comprised of whiskies from two or more distilires
Single means that all of the products came from a single distilliery
Malted means that it’s distilled from a single type of malted grain
American Whiskey
Varies significantly depending upon the type of grain. Bourbon, Rye, Corn, and Straight are the common varients. Bourbon mash must contain at least 51% corn, Rye 51% rye, Corn 80% corn, and Straight is less than 51% of any one grain
Canadian Whisky
Made from rye grain. By Canadian law they must be aged at least 3 years in woodon barrels
Bourbon
A type of American Whiskey. Aged in charred oak barrels. Must be at least 51% corn. 80% of all American whiskey comes from Bourbon County, KY because it is kinown for its naturally iron-free water.
Tequila
Distilled from juice extracted from the heart of the blue agave plant. tequila is fermented, distilled twice and then aged.
Blanco tequils age for 14-21 days.
Oro tequilsa are aged up to two months
Reposado (rested) tequilas are aged for up to one year
Anejos (aged) are aged for at least a year
Cognac
Amber brown colored brandy made in the region surrounding the town Cognac, in France. Produced by twice distilling the white wines grown in the area in copper pot stills and then being aged for at least two years in French oak barrels. Often caramel colored.
Alize
Blend of passion fruit juices and cognac
Amaretto
Generic cordial invented in Italy. Made from apriot pits and herbs, which give it a pleasant almond flavor
Angostura Bitters
Introduced by a Prussain surgeon who served in the battle of Waterloo. Made famous by the Manhattan Cocktail, Old Fashioneds, and Pink Gin
Ainsette
Cordial derived from the anise seed. Tastes like licorice. In Italy Ainsette is called sambuca, in Greece it is Ouzo, and in Turkey it is Rakı.
Bailey’s Irish Cream
Made from fresh dairy cream, Irish Whiskey and natural flavors. Doesn’t spoil.
Black Haus
German brand of blackberry schnapps liquer
Blue Curacao
Intense orange liquor made from the peels of green oranges from the island of Curacao. It is dyed blue. Compare with Triple Sec for flavor.
Cachaça (ka-shah-suh)
Rum liquor made from fermented sugarcane juice, most commonly produced in Brazil.
Campari
Type of bitters, an apertif obtained from the infusion of sixty ingredients.
Chambord
Made from raspberries combined with honey
Cointreau
Clear brandy based liquer and type of triple sec flavored from the peel of sour and sweet oranges.
Créme de Casis
Made from black currants
Créme de menthe
Made from mint and spearmint. Comes in green and clear varieties.
Drambuie
The great proprietary liquer of Scotland, made of Scotch and heather honey.
Frangelico
Italian liquer flavored with hazelnuts, cocoa, and vanilla. Originally distilled by monks in the 17th century.
Galliano
Sweet, spicy, herbal liqueur named after an Italian war hero, Major Giuseppe Galliano
Goldschlager
87 proof cinnamon schnapps liqueur imported from Switzerland. Features flakes of 24 karat gold.
Grand Marnier
Orange flavored liquer produced from a blend of cognac, orange peel, spices, and vanilla
Hpnotiq
Tropical-fruit liqueur, made from a blend of premium French vodka, pure cognac, and natural tropical fruit juice
Jagerrmeister
70 proof German liqueur made with 56 spices and served at 5 degrees F
Kahlua
Made from coffee and the alcohol distilled from cane sugar
Malibu
Blend of coconut and Caribbean um
Midori
Green honeydew flavored spirit originally produced in Japan, now manufactured in Mexico. Midori means green in Japanese
Peach schnapps
Sweet peach-flavored schnapps
Rumple Minze
Sharp peppermint-flavored German schnapps
Sloe Gin
sweet, syrupy liqueur made by infusing sloe berries (wild plums) in gin
Southern Comfort
Popular proprietary liquerur from New Orleans, often described as a peach whiskey.
Triple Sec
Made from sweet and bitter oranges
Vermouth
Fortified wine apertif, normally infused, macerated, or disttled with herbs, spices, alcohol, and a blend of other ingredients. Comes in sweet and dry.
