Winter Spiced Butter Batch Recipe
1 teaspoon Freshly ground cinnamon
1 teaspoon freshly ground nutmeg
1 teaspoon freshly ground black peppers
3/4 teaspoon cloves
1/2 teaspoon allspice
1/2 teaspoons freshly ground anise
2 cups salted butter
4 cups packed brown sugar
2 tablespoons molasses
1 teaspoon of vanillla extract or 1 vanilla bean pod scraped
1. Combine Spices in a bowl set aside 2. Melt butter in saucepan over low heat 3. Add sugar and stir. 4. Add molasses and vanilla and stir 5.Stir in Spice Mixture "6. At first butter will form seprate layer, continue to stir over low heat until all ingredients combine about 15 minutes" 7. Let cool Slightly 8. While still warm and malleable, pour into storage tight 9. Once cooled completely seal and store in fridge while not in use 10. Expiration date will be same as butter original exp date
ZaZa Nog (yields 60 drinks) Batch Recipe
24 eggs
4.5 cups white sugar
1.5 quarts of makers mark bourbon
1.5 quarts of dusse vsop cognac
2 quarts of heavy cream
2 quarts of half n half
1. Separate eggs and beat yolks until pale and thick
2. Gradually add the sugar, beating continuously
3. Stir in whiskey,cognac, heavy cream, and half n half
4. Cover and refrigerate for at least 3 hours
5. Beat egg whites into soft peaks
6. Fold egg whites in egg nog
7.Store, label, refrigerate.
