Sheep cheese, moderately hard, creamy taste. Similar to MANCHEGO
Brin de bleecker/hudson flower
sheep cheese, soft and creamy, herbed rind
tarentaise
cow cheese, hard. Only non-pasteurized. Sharp! Similar to GOUDA. Sweet and salty with a sharp finish!
Tomme de savoie
Cow; soft to moderate texture, earthy and pungent taste. Gooey, sweaty; like an extremely aged brie.
Fourme de ambert
Cow; creamy bleu cheese, type of roquefort but less strong. Comes on the butter lettuce salad. Creamy and crumbly. Yumbers!
