What does acidity in food do to wine ?
Increases the perception of body, sweetness and fruitless of wine. Some acidity can bring a very high acid wine into balance and enhance fruitiness. Low acid in wine and high acid foods can make wines seem flat, flabby and lacking focus.
Salt in food
Increases perception of body and decrease bitterness and acidity in wine. Salt can help soften some of the harder elements
What does bitterness in food do to wine ?
Increases bitterness in wine, bitter flavours generally add to each other.
What does chilli heat in food do to wine ?
Alcohol can increase the burning sensation of the chilli
