Porosity
The extent to which a material will absorb liquids.
Resiliency
A material can react to a shock without breaking or cracking.
Coving
A curved, sealed edge placed between the floor and the wall to eliminate sharp corners or gaps that would be impossible to clean.
NSF
An organization that creates national standards.
Potable
Drinkable water.
Booster Heater
Used to maintain water temperatures.
Cross-Connection
A physical link between safe water and dirty water.
Backflow
The reverse flow of contaminats through a cross-connection into a drinkable water supply.
Backsiphonage
When high water use in one area of an operation creates a vacuum in the plumbing system that sucks contaminants back into the water.
Vacuum Breaker
A mechanical device the prevents backsiphonage.
Air Gap
An air space that separates a water supply outlet from a potentially contaminated source.
Requirements for Handwashing Stations
Must have hot and cold running water.
Must have soap.
Must have a way to dry hands that is always clean.
Must have a garbage container located nearby.
Must by signage that is clearly visible to tell staff to wash hands before returning to work.
