Chablis Lewin notes Flashcards
What percentage of Chablis production is Chablis AOC?
Over half, close to 2/3.
What is the largest co-op in Chablis?
La Chablisienne
High quality, maybe the only producer that represents all of the Grand Crus. (Co-ops account for about a quarter of production in Chablis)
Name a few Burgundy Negociants with Chablis labels
Jospeh Drouhin: Drouhin-Vaudon
Louis Latour: Simmonet-Febvre
Faiveley: Billaud-Simon
Where does the name ‘Mont de Milieu’ come from?
Its location; halfway between Burgundy and Champagne
What is the topographical difference between Kimmeridgian and Portlandian soils?
Kimmeridgian tends to the south and east facing slopes.
The harder Portlandian occupies the higher elevations and plateaus.
This helps support a case that it is not as much the soil type as the aspect and elevation that creates the major differences. Argument for expansion of Chablis AOC beyond the restriction of Kimmeridgian soils.
