“Cool-Continental.” Harsh, wet, cold. influenced by Atlantic ocean. Frosts in both spring and fall shorten growing season.
How does the climate influence the style of wine?
Grapes struggle to ripen, resulting in crisp and acidic wines. Described as minerally, steely.
What viticultural challenges exist?
Picking time is critical due to late-season frosts. Ripening of grapes can be difficult

White Kimmeridgian clay and limestone
Calcereous soil, oyster shells and crinoids litter the soil from an ancient sea that used to cover the region.
How are Chablis produced?
Most (particularly lower level wines) are in stainless steel. However much of premier and Grand crus use oak either for aging or during the fermentation process. The Grand crus are thought to be intense enough to withstand the barrel’s impact. Typically used oak barrels are used. Malolactic fermentation is common.
