Oats, corn, wheat, millet, barley, and rice
What are the parts of the seed?
Husk (rough outer covering), bran (hard outer covering under husk, protects endosperm), endosperm (largest portion of grain which stores CHO and protein), and germ (embryo and smallest portion of grain)
Where is the fiber in a kernel?
In the bran
What is the germ rich in?
fat, b-vitamins, and vitamin E
What additives are in grain products?
B vitamins and vitamin C, BHA and BHT (antioxidants)

Corn makes up 32% of world grain production

Which two countries are the largest producers of wheat?
Russia followed by the US
What is the hardest kind of wheat?
Durum wheat which is used for pasta, couscous and some Mediterranean breads.
Which kind of rice is stickier?
Medium and short grain. Long grain rice cooks to a drier, fluffier consistency.
How should you store whole grains?
Airtight container to prevent moisture absorption. Uncooked grain should be stored in the fridge and cooked grains can be frozen.
