Short fatty acyl tails are less likely to interact with each other, making the membrane more fluid.
Double bonds form kinks in the fatty acyl tails. This makes it harder for the tails to interact with each other, making the membrane more fluid.
How Does Cholesterol Affect the Cell Membrane at Different Temperatures
At high temperatures it stabilizes the membrane and prevents it from falling apart.
