A
  • Lactic acid bacteria
  • Heterogenous family of good and bad
  • All ferment sugars and form lactic acid as end product
  • Lactic acid is less volatile than others and chelates calcium
  • Facilitates demineralization of enamel
  • Form glucose polymers (glucans) from sucrose via glucosyltransferase enzyme (GTF)
