- Lactic acid bacteria
- Heterogenous family of good and bad
- All ferment sugars and form lactic acid as end product
- Lactic acid is less volatile than others and chelates calcium
- Facilitates demineralization of enamel
- Form glucose polymers (glucans) from sucrose via glucosyltransferase enzyme (GTF)
