carbon, hydrogen and oxygen (cho)
what happens when cho link together?
when cho link together they become simple sugar units e.g. glucose
what do simple sugar units link up to make?
simple sugar units link up to make starch
what are the 3 classes of carbohydrates?
the 3 classes of carbohydrates are :
sugar : e.g. sweets, biscuits and cakes
starch : cereal, potatoes and bread
fibre : wholewheat cereals (no part of the cereal grain taken away) , brown or wholemeal bread, fruit and vegetables (especially fruit and vegetable skins)
what are the functions of carbohydrates?
protein is mostly used in the body for heat and energy, but excess carbohydrates are stored as fat. fibre is never stored as fat
what role does fibre play in the body?
fibre is used to move waste from the body
what are the parts of the cereal grain?
the parts of the cereal grain are :
the bran : the bran contains fibre that is used for moving waste from the body
the beard : the beard are bristles that protect the grain
the endosperm : the endosperm is the part of the cereal grain that contains gluten and starch. coeliacs cannot eat this part of the cereal grain
the germ : the germ is the most nutritious part of the cereal grain, and it contains lbv protein, vitamin b, iron and some unsaturated fat
what is the nutritional value of the cereal grain?
the cereal grain contains iron for blood, calcium for bones and teeth, fibre to prevent constipation, gluten and lbv protein for healing of the body
what happens to the cereal grain during cooking?
during cooking, the fibre softens, it absorbs liquid and absorbs fat
what is the dietetic value of cereal?
it is good for vegans as it contains protein that they cannot get from meat, and cereals are cheap and very filling. they are also very versatile foods that can be eaten with lots of things
what are some products of cereals?
flour, potatoes, bread and pasta
