How do emulsifiers work?
The oil clumps to the hydrophobic end and the water clumps to the hydrophillic end, the oil droplets become surrounded by the emulsifier allowing them to combine with water and become smaller droplets.
What temperature is hydrogenation done at?
60 degreees
