Winemaking
Traditional practices: American oak for red & white, long periods of oxidative ageing
Modern: Stainless, temp-controlled ferment, fresher un/oak whites, French oak for reds, shorter maturation periods.

Reserva - wines from selected vats/vintages
reds: min 36 months, min 12 mo. oak
w/r: min. 18 months, 6 mo. oak
Gran Reserva - only produced exceptional vintages
