Steps for non reducing sugars test
A
- Take a small sample and heat in 95’C water baths with benedicts solution to confirm it’s negative result
- Hydrolyse another sample of the sucrose by heating in 95’C water baths with dilute acid
- When cooled, neutralise acid with alkali
- Add same concentration of Benedicts solution and heat in 95’C water bath.
- Positive brick red colour indicates a non-reducing sugar was originally present
