Steps for non reducing sugars test

A
  1. Take a small sample and heat in 95’C water baths with benedicts solution to confirm it’s negative result
  2. Hydrolyse another sample of the sucrose by heating in 95’C water baths with dilute acid
  3. When cooled, neutralise acid with alkali
  4. Add same concentration of Benedicts solution and heat in 95’C water bath.
  5. Positive brick red colour indicates a non-reducing sugar was originally present
