Lower temp 5c-10c, causing the yeast to work less vigorously & create carbon dioxide more slowly
This results in less turbulence in the beer& yeast precipitating early life cycle

Lager = cooler / bottom fermentation, crispier & cleaner body

4.5% - 5.5% ABV

Has a noticeable hop bitterness, (30-45 IBU)
American Pale Ale
- One of the 1st Americanized styles. 1980
- Using American ingredients to emulate the English Pale Ale
Wheat Malt
- The 2nd most common malted grain after barley malt
- German wheat beer must contain at least 50% wheat malt
- American style usually contains 10% - 35%
Weissbier
Classic wheat beer of Bavaria & 1 of Germany’s greatest & most distinctive beer styles
- Means white beer in German
- Outside of Germany it is known as a hefeweizen, literally “yeast wheat” packaged unfiltered & made with at least 50% wheat
Stout
Category of warm fermented ale
Distinguished by its dark colour & distinct roasted coffee character
Imperial Stout
- Among the richest & strongest of beer styles
- Originally brewed in London as an “extra stout” porter for export to the Baltic countries & Russia
- Once brewed for Czarnia Catherine the Great
Pilsner
Pale, Golden Lager
Originated in Pilsen, Czech Republic 1838
Initiation pilsners today account for 95% of global beer market
Kolsch
- Top fermented local beer styles from Cologne, Germany
- Lightly fruity yeast note in aroma & taste, as well as pleasant hoppy bitterness
- Dates back to 874 AD
Altbier
1 of the few indigenous German ale styles, along with the blondes & hefeweizens
Alt means “old” in reference in the old style of brewing before cold fermented lagers
Bock
Strong beer w typical 6.5% ABV
Mainly bottom fermented
Originated in lower Saxton, Germany
