What is beer made from?
Water, malted grain, hops and yeast.
How do the ingredients form the beer?
Sugars from malts are balanced with bitterness and aromatics from hops, and the resulting wort is fermented by yeast, which creates carbon dioxide and ethanol as metabolic byproducts.
Malts
Refer to malted grains, usually barley.
Barley Malt
Responsible for giving beer its color, foamy head, sweetness and flavor, and providing natural enzymes that convert starches into sugars necessary for fermentation.
Others malts?
Rye, oats, corn and rice
Rye
Contributes a spicy malt taste
Oats
Create a milky, silky taste and texture.
Corn and Rice
Create a dry, starch taste
Hops
Hops add bitterness to bear that balances out the sweetness of the malts. They are also largely responsible for a beer’s aroma and head retention
What do hops taste like?
Earthy, herbal and bitter. Also expect zesty tastes and smells like pine, mint, citrus (especially grapefruit or lemon) and grass.
Yeast
The most important and unique ingredient in beer. Discovered by Louis Pasteur in 1857.
What are some new forms of yeast?
Brettanomyces (wild yeast), lactobacillus and pediococcus (bacteria)
Adjuncts
Non barley sources of fermentable sugar added to beer.
What are additives?
Any enzyme, preservatives or fining agents used to assist the brewing process.
